Poppy Seeds & Bird Feeders....

Before I turned on the oven I made a quick trip to a friend's backyard.......

It was busy with all kinds of bird activity and blooming going on......

She inspires me....Greatly!!.....I'm off to go find another bird bath and fill my feeders.......

Out of the oven came these little cups;

Lemon Poppy Seed

2 cups all purpose flour                             1/2 cup milk
1/4 cup poppy seeds                                  1/4 cup freshly squeezed lemon juice
1/2 tsp. salt                                                  I added zest too even though the recipe didn't ask for it
1/4 tsp. baking soda                                  2 eggs, lightly beaten
1 cup sugar                                                 2 tsp. vanilla
1/3 cup corn oil

Heat oven to 350 degrees, in large bowl stir together the flour, poppy seeds, salt, baking soda, sugar. In a small bowl, blend together milk, lemon juice, oil, eggs, and vanilla.
Pour the liquid mixture into the dry and mix well.
Fill greased muffin tins - bake 20 minutes....makes one dozen.

Have a great start to your week and I'll check back to see what you've been doing, all you overly talented bloggers out there in the world.......Did I tell you I'm making progress with Paul McCartney's song?? Slow progress, but progress just the same:) See you soon.....

I'm amazed you caught one of those hummingbirds! My camera is never handy -- and by the time I get things in focus, poof -- they're gone. Enjoy those birds. It's Spring!!!
