Betcha Eat More Than A Few....

If you like potato chips....and you like cookies....then I'd expect you'd LOVE them together.

These are a family favorite, hope you'll give them a try.

Potato Chip Cookies

Cream together:
2 sticks butter, (1/2 pound) - I don't use margarine
1 cup + 2 Tbsp. sugar
1 egg yoke (yoke only)
1 tsp. vanilla

Add
1 1/2 cups flour
1/2 cup chopped pecans

then, the best part....I take three large handfuls of ruffled type potato chips and put them in a plastic sandwich sized bag. Crunch up the plastic bag with your hand, not too finely....about 8 good crunches with your hand.

then, add the broken chips to the cookie mix....stir in gently (you want some of the potato chips to be recognizable in each cookie).

Bake on an ungreased cookie sheet at 350 degrees for 10 minutes or lightly browned on the edges of each cookie.

I hope you'll include a potato chip cookie in your lunch sack this week.

These sound interesting for sure, may have to give it a whirl. I am catching up on your post and can't believe how much you have been doing, holy cow! My train has totally gone off the tracks in blogville since work has been SO crazy but i did manage a new post :). I need to pick up some frames and was waiting for the sale too, is the store you are referring to start with an A? The weather is starting to change and i love it. I've been knitting a bit to and hoping for a slow down now that summer is almost over, phew. . xoxo Jen
