mild with sunshine..





the weekend included a bit of knitting....okay...let's make that lots of knitting

movie watching......I think I may have fallen asleep...not too exciting watching Margaret/Meryl

marketing.....I'm loving meal planning with all the summer selections of fruits and veggies

baking......always love baking...or cooking...both relax the heck out of me

deviled eggs
 as a surprise for the next person who stands with the door open looking "for something to eat"

roast chicken for a huge pot of tortilla soup for later in the week....and the freezer for "another day"
if I waited for a cold day in Southern California to eat soup....well, let's just say I wouldn't be eating soup

and a decades old recipe for "Coconut Chews" from my grandmother....she was a great cook
 and the sweetest lady I've ever met...along with my Mom...her daughter...
does that mean it will trickle down to me??

here's the recipe.....hope you'll enjoy it

1/4 cup butter
1 cup brown sugar
1  egg, well beaten
1 tsp vanilla
1/4 cup flour
1 tsp baking powder
1/4 tsp salt
3/4 cup grated coconut
1/4 cup chopped pecans or walnuts

melt butter in a heavy saucepan, stir in sugar until disolved
cool
stir in egg and vanilla
add flour, baking powder and salt and coconut
mix throughly
pour batter in a 8 x 8 buttered baking dish and sprinkle nuts on top
bake at 350 for 25 minutes...cut into bars while still warm...
they are a bit sticky but shape easy...unless you decide to gobble them up right there and then...


see you tomorrow...just hours now until the dogs arrive.....I have to tell you how they came to be in Italy in the first place....lucky pups.

This CA weather has been wonderful, hasn't it? That was so smart of you to roast a chicken! They are great for using in all sorts of things. I am jealous of the deviled eggs too. I love them, but no one else will eat them here!

Mmm, those coconut chews are calling my name.
I love baking too, I find it so calming, however this time of year with no A/C...well, If I want to bake I have to do it at night time, so the house has time to cool down.
Oh well, I dont think my hips need it anyway;)
