Little Variety Today....



Here's a soup recipe that I find myself making fairly often - it's sooooo easy!  Mom loves soup and it's her favorite.

Chicken Tortilla Soup

1 Roasted Chicken (removed from bone, skinned, chopped or shredded)
1 onion, chopped
3 cloves garlic
1 green bell pepper, diced
1 red bell pepper, diced
1 bag frozen corn (chuck wagon corn with peppers works too)
1 can diced jalapeno peppers - or a couple fresh chopped
4 cans diced tomatoes with mexican seasonings - or plain works too if the selection at your market is slim
3 cups chicken broth
1 jar of Herdez Salsa Taquera - or your favorite jar of salsa, this one's spicy

Toppings:
broken tortilla chips
diced avocado
shredded cheese

Saute the onion, peppers, and garlic in 3 Tbsp. of olive oil, add drained tomatoes, corn, jalapeno peppers, chicken broth, jar of salsa. Heat through - after heated add chicken to the soup mixture, remove from heat.
I don't cook the soup with the chicken, it tends to make the chicken overcooked and dry since it's already moist and cooked from the roasting.

This is a spicy soup......adjust how much of the jar of salsa you add based on the preference of "heat" your family enjoys. We love spicy food so on a scale this would be high on the chart....a gulp of milk will put out the fire in your mouth.

These were my creations, the ladybug and bumble bee I've seen before made with different styles but my favorite was the butterfly...I think that one's a little different.

Knitting for a set of triplets awhile back,  I'd been wanting to knit this pattern so when I heard there were newborn triplets out there (a friend of my sister-in-laws) I thought these would be fun to make....I'd given thought to making a set of assorted fruits too, but by the time I finished the last bug I was pretty much over making hats.

More Garter Loop Scarfs.....
I used Rowan Felted Tweed on the lavender, the red is a blend of merino wool and angora....the tweed is nice and light and can be worn inside the house with a shirt.
Off to an election party with my needles in hand for a checkbook cover project - tomorrow we'll know who's elected, I'm just glad of the t.v. commercials ending and recorded phone calls to my home stop ringing....those folks will NOT be receiving my vote.

That soup is making me salivate. I think it may have to be our supper tonight (is it okay to be lazy and use a store-bought rotisserie chicken? I vote yes!)
