Aid....in this case, it's lemonade.

The hours are passing quicker than I can get stuff done...so what does that mean for you????

No picture of a Peach Melba Shorbread Bar because they've never been baked...but that doesn't mean you should have to wait for the recipe...right? Right...

Now, if anyone East of the border of California is brave enough to turn on your ovens..here you go.

2 cups all-purpose flour
1/2 cup granulated sugar
1/4 tsp. salt
1 cup cold butter
1 cup peach preserves
6 tsp. raspberry preserves
1/2 cup sliced almonds

Garnish: powdered sugar

1. Preheat oven to 350. combine first 3 ingredients in a medium bowl. Cut in butter with a pastry blender until crumbly. Reserve 1 cup flour mixture.
2. Lightly grease an 11x7 inch or 9 inch square pan. Press remaining flour mixture onto bottom of prepared pan.
3. Bake at 350 degrees for 25 - 30 minutes or until lightly browned.
4. Spread peach preserves over crust in pan. Dollop raspberry preserves by 1/2 teaspoonfuls over peach preserves. Sprinkle reserved 1 cup flour mixture over preserves. Sprinkle with almonds.
Bake at 350 degrees for 35 - 40 minutes or until golden brown. Let cool 1 hour on a wire rack, Cut into bars. Garnish if desired.

Now....you may want to tuck this recipe away until Fall since the weather reporters on t.v. are stating that most of the U.S. is blazing hot....I'm sending cool breezes your way...I won't even tell you what the weather is here...that would be just plain cruel.

I'm leaving tomorrow early...heading North to spend time with family...but before I go....

here's a refreshing recipe to enjoy this weekend while sitting in front of a fan with cold wet hair (my favorite way to sleep in the summer on hot nights)

FROZEN LEMONADE PIE......
1 store purchased graham cracker pie crust
1 small frozen container condensed lemonade - not thawed
1 quart or so...wing it on what looks good to you of vanilla ice cream

Mix the frozen lemonade with vanilla ice cream (somewhat softened but not much as a good wooden spoon mixes the two just fine) in a large bowl.

Spread frozen mixture into the graham cracker crust...cover with plastic wrap and freeze.

Slice a piece of cold lemonade pie, drink a tall glass of iced tea.....dream of Fall and the leaves you'll soon be raking:)
