Do You Have A Memory Of White Fluff?

it may be a bit too humid where you're living to get the perfectly beaten egg white....I'm not sure....

but humid or not....

I'm always ready to eat candy.....and it'll taste good in any form...

I've heard stories of people with fond memories of relatives...an old neighbor....a distant Aunt...

who made a wonderful fluff type white candy......some included cherries...always made with nuts

Divinity.....often thought of as an old fashioned candy.....

I was introduced to this confection by a sweet woman named Ruth....she had blue eyes that twinkled....

seriously...there's no other word to describe her eyes...they twinkled

she made me think that on Christmas Eve...she may have been known as Mrs. Claus..

she was my Grandmother's sister-in-law....a sweet tiny woman with blue twinkle eyes that made me think she knew a wonderful secret

I never had a chance to get her recipe....she didn't live close by....I only saw her a couple of times in my life....

and then word came she'd past away....

but her gift of candy and her twinkle eyes have never been forgotten....

this recipe....it's the only one I've ever used....turns out every time....and I remember Ruth and the fond memory she's given me....

it's an old fashioned type of treat....it conjures memories....it most definitely should be a new experience for someone to tuck away for a wonderful memory for later down life's road

here you go...hoping you'll give it a try.......

I'm certain anyone who makes this delightful treat will aquire the gift of "twinkle eyes"...

what a great way to be remembered.....thank you Ruth.

2 1/4 cups sugar
1/2 cup water
1/2 cup light corn syrup
1/4 tsp. salt
2 egg whites
1 1/2 tsp. vanilla
1/2 cup chopped nuts (walnuts or pecans) (optional)
1/2 cup chopped candied cherries (optional)

1. Mix together sugar, water, corn syrup and salt in a 2 quart casserole
2. Loosely cover with a lid or plastic wrap. Microwave on HIGH (100%) for 6 minutes or until boiling.
UNCOVER
Microwave on HIGH (100%) for 10 minutes or until hard ball stage is reached. (I just do the full 10 minutes...never knew what Hard Ball Stage is)
3. Meanwhile, beat egg whites until stiff.
4. Slowly pour hot syrup over egg whites while beating at high speed of stand mixer...be super careful with this part..wear hot mitts as the syrup will be extremely hot...not something for "small ones" to share in this part of the candy making
It's about 6 minutes that I continue the beating process after pouring in all the syrup.....
5. Fold in nuts and cherries
6. Quickly drop teaspoons of candy onto waxed paper or pour into a buttered 10x6x2 dish...

we love candy so....teaspoon full??? not around here....we go for a large tablespoon heaping size drop on the wax paper..
no special shape is the goal...
just a white fluffy large marshmallow size piece of sweet melt in your mouth goodness....
enjoy my friends....

and if you want to remember me later down the road for sharing this with you....well.....
that would certainly put a twinkle in my eyes.

My mother in law makes the best divinity. She's got that twinkle as well. :) Lovely post.

My mother made divinity the old fashion way and I tried it but it hardly ever came out....I will give this microwave recipe a try:)

My grandmother called her's "Mashed Potato " candy. Was it divinity or really made with mashed potatoes? I guess I'll have to ask my mom.
