In my corner.....

The weekend passed by too quickly - nothing new there.
The work week - I've got a job, that in it's self is a good thing.
The world events - if you want to have every bit of happiness sucked out of your day simply turn on the news.

So in my world I've been spending my time; 

Baking these, and yes, they are as good as they look and sooooo much more fattening that you can imagine!!
Read the ingredients - yikes!

Dipped Sandwich Cookies
18 Tablespoons butter, softened and divided
1/2 cup sugar              2 cups all purpose flour
1 egg yoke                                     
1 tsp. vanilla

Lemon Filling:
8 Tablespoons butter
2 cups powdered sugar
2 - 4 tablespoons lemon juice (I used more, never enough lemon flavor for me)

4 oz. semi-sweet baking chocolate
1/2 cup pecans or walnuts, finely chopped.

Beat 16 T. butter and sugar, beat in egg yoke and vanilla....gradually mix in flour, shape dough into 1 inch balls, place balls 2" apart on ungreased cookie sheet. Flatten into 2 inch circles with bottom of glass dipped in sugar. Bake at 350 until firm to touch and lightly browned. 10 -12 minutes.
Spread lemon filling on 1/2 of the cookies (the others are used to place on top).
Melt the chocolate and butter, then dip half the cookie in and then into the chopped nuts.
Place on waxed paper until chocolate has set - about 10 minutes.

Here's the Sea Shell blanket, I'm pleased with the results, now I just need a baby to wrap inside.....the stork is still circling and not due to arrive for a time.

New book - I'm thinking of this sweater, I did cast on with some pink but I'm rethinking the yarn color selection.

Kyle the blanket is beautiful! How exciting for you all that a wonderful little buddle will be wrapped inside of it! Okay those cookies....Seriously my mouth is watering, not good for my diet but will definitely be on my bake list for a splurge day. Thanks for sharing the recipe!

The blanket looks nice and cuddly. And that cute baby cardi is so pretty. Amazing, all that prettiness from one skein!
